Watermelon Rind Tutti frutti

Previously I came up with how to make dosa, rasam from the waste part of watermelon i.e how to use rind now it’s time for colourful tutti frutti that you get in stores😍 …

yes you all heard me right tutti frutti made out of the watermelon waste white part 😃…. Tutti frutti are usually made with raw papaya but here in this recipe we use watermelon rind instead of papaya, recipe is same for both . I came across this recipe in a foodie group and found it interesting, as this is prepared with scratch and I was carving for tutti frutti ☺️

I really dont want to waste anything during this lockdown time. So gave this recipe also a try 👍 And moreover I love Tutti frutti alot, I eat it regularly when I come across them on opening my fridge 😜… I had forgot to store it before lockdown and after that I couldn’t find it, really I was missing them 😔

But now because of this recipe I could fulfil my carving 😊, this can be made any time and stored and can be used with my fruit salad, icecream or in making cakes…..this tastes exactly like the store bought tutti frutti 😍

Lets see how it is made

INGREDIENTS

•Watermelon rind (white part)

•water as required

•2 cups sugar

•food colours

METHOD

•Cut white portion of watermelon into small cubes.

•Boil them in water till they become transparent.

•Stain them using a stainer and remove water completely.

•Now in a pan boil sugar with 2 & 1/2 cup water for 5 to 7 mins .

•Add boiled watermelon rind cubes into it.

•Boil for 10 mins, turn off flame cool awhile

•Now divide the boiled rind into 2 or 3 parts with sugar syrup in 3 different bowls.

•Add food color as per your choice in each bowl. Mix well, I have used 2 colours here

•Rest the mixture for 2- 3hrs or overnight as I did.

•Now pick only the rind cubes without sugar syrup and spread on a plate .

•Let them dry for a day or two.

•Tutti frutti is ready to be stored, use it as you like

NOTES

*Don’t throw the remaing sugar syrup add salt, squeezeze lemon give mix and make lemon juice serve chilled colourful drink 😊

*Same recipe holds good with raw papaya for making tutti frutti

​Christmas is on its way,so why not try this yummy CHOCOLATE  ICE CREAM CAKE… ☺☺☺

I made this chocolate vanilla ice cream cake for my parents Anniversary … I had seen a vedio on this a few days back and planned to give it a try on the special day… 😍😍😍

       Its very easy to make all you need is a chocolate /vanilla cake (i used my basic choclate cake recipe or you can get a ready made cake), cut cake into 2 -3 equal size roundals,place first layer spread vanilla ice cream /any ice cream of ur choice spread evenly (2-3 scoops),same way do with the 2 nd layer and close with 3 rd top layer of cake and freeze for 4-6 hrs ,wrap tightly with a aluminium foil and place in a air tight container…..

Decorate with choclate sauce ,choco chips, gems ,fresh fruits, cherries ,Strawberries anything of ur choice….
*chocolate sauce recipe 2 tblsp cocoa powder,butter 1 tsp and 2 tblsp milk mix and melt and boil in low flame till thick cool this and use as a topping for cakes or icecreams ..

Note 

*i freezed overnight,later at the time of cutting i garnished with kiwi fruit

*Rest 3-5 minutes to room temperature before cutting for smooth cutting..

CHOCOLATE CUP CAKES

   Here is a never fail chocolate cup cakes recipe which I follow from a long time….I can say I started baking cake with this recipe itself, …..This cake is so soft ,spoongy and fluffy….altogether a perfect cake..
    Thanks to my sister who had shared this recipe with me….
  The same recipe can be prepared for making choclate cakes(big)….but baking time may varry…
Try this and enjoy with your kids and family

INGREDIENTS

•1 1/2 cup sugar powder (or use as needed according to ur sweetness)
•Dry Ingredients
▪2 cups all purpose Flour /Maida
▪1 tsp baking powder
▪1 tsp cooking soda (baking soda)
▪1/2 tsp salt
▪1/2 cup choclate powder
•Wet ingredients
▪2eggs (at room temperature )
▪1cup warm milk
▪1/2 cup refined oil
▪1 tsp vanilla essence

METHOD

▪Grease muffin/cup cake moulds or use butter papper for lining .
▪Preheat oven at 200 deg c.
▪Combine all dry ingredients then sieve thrice so that everything get mixed evenly,keep aside.
▪Now combine all wet ingredients  like eggs,oil,milk in a big container and blend using a electric or hand blender till forthy.
▪Now add sugar powder, vanilla essence and blend till sugar dissolves in wet mixture
▪Add in dry ingredients in parts (3 times)to the wet mixture.
▪Mix well using blender or by cut and fold method
▪see that no lumps are formed
▪Now fill mixture 3/4 in greased cups,sprinkle  and bake for 20-25 minutes in the preheated oven….

NOTE

▪In baking the most important thing is to keep everything at room temperature
▪Always Preheat your microwave /oven
▪Baking time may varry in different ovens so check after 18-20 minutes using a toothpick inserted in the middle of the cake, if it comes out clean then it’s ready or else bake further till done…
▪You can add choco chips to the batter if desired..

CHOCOCHIP CHOCOLATE CUP CAKES

ChocoChip Chocolate Cup Cakes….A perfect tea time snack or for kids tiffin box it’s just perfect….
     A easy, quick and perfect recipe which I have tried many times…
   Vanilla lovers can Omit the choclate powder and make this into vanilla cup cakes…
       Here I have used choco chips, but this is completely a optional…. so try this as you like and enjoy with your kids…

INGREDIENTS

•3/4 cup sugar powder (or use as needed)
•choco chips as required
   •Dry Ingredients

EGGLESS ALMOND POUND CAKE

ALMOND POUND CAKE……NO EGG RECIPE which can be prepared in a jiffy…A good accompaniment to evening tea or coffee or even for kids tiffin box… soft , crunchy here and there because of nuts….A easy and quick recipe by Chef Ajay Chopra …

INGREDIENTS

• 1 tin condensed milk
•1 cup butter (at room temperature ) + 1 tsp for greasing moulds
•1 tsp baking powder
•75 ml water
•2 cups all purpose Flour
•1 tsp vanilla essence
•100 gm chopped Almonds + few chopped for garnishing on top
• 8″/8″ cake tin

METHOD

▪ Preheat oven at 180°c
▪ Grease 8″/8″ cake tin by brushing butter and dusting flour or use parchment paper at bottom of cake tin
▪ Mix condensed milk and butter to milk consistency ,whisk well
▪Add baking powder and water, mix well
▪ Add flour,essence, Almond chopped
▪Mix all by cut and fold method to a sticky dough,see that no lumps are formed
▪Now pour this in a greased cake tin
▪ sprinkle few chopped Almonds on top
▪ Tap once or twice  for the air bubbles to comeout
▪Bake this for 25 -30 min in the preheated oven
▪Rest it 10 minutes on a wire rack and cool  and demould this
▪After 30 minutes cut into slices and enjoy with tea or coffee..

NOTE

* Different oven has different operation and requires different time so I recommend  to bake according to the time needed in your oven when you bake other cakes or as per instructions…..
* Check once after 22- 25 minutes, when your cake is light brown and test by inserting a knife in the center,if it comes out clean then it’s ready or else bake further till done…
*always use correct measurements for perfect baking as per recipe..

EGGLESS CHOCO COCO BALLS

  This is simplest dessert recipe I have come across…..this recipe involves no bake no cook….easy to prepare and tasty to eat… Even kids can prepare this recipe when ever they like…
   If you are in a cooking competition without fire then a perfect recipe I can say

INGREDIENTS
(This makes around 10 equal choco coco balls)

• 15 Marie biscuit powdered
•2 tblsp butter
•2tblsp sugar powdered
•2 tblsp coco powder
•2 tblsp dessicated coconut
•5-6 drops of vanilla essence
•5 tblsp condensed milk
•Few cherries for decorating (optional )
•1tblsp dessicated coconut for decorating

METHOD
▪ coco powder mixture -(mix sugar powder, biscuit powder, coco powder, dessicated coconut and keep aside)
▪ blend butter and vanilla essence to creamy texture
▪Add coco powder mixture
▪ add condensed milk and mix to a dough
▪now make balls out of this or according to desired shape and size
▪roll this in dessicated coconut snd place cherries and decorated before serving

NOTE

*You can add condensed milk little more if your dough is hard and balls are breaking…

EGGLESS DATES CAKE

Eggless Dates Cake Recipe .. is a easy and very quick cake recipe which I have come across, no much ingredients, no much blending required as compared to other cakes ….I hope you you all will enjoy making this with a flavour and taste of dates…..This recipe will be a winner at your home, kids will love this…

INGREDIENTS

•1cup all purpose flour /  maida (135 gms)
•18/20 Dates deseeded(i have used brown dates, black dates can also be used)
•3/4 cup warm milk(185 ml)
•1/2 -3/4 cup granulated sugar(I have used more then half cup and less then 3/4 cup)
•1/2 cup refined oil(125 ml)
•1tsp baking soda
•1tblsp chopped nuts like walnuts and cashews (optional)

METHOD

▪Soak dates with warm milk and set aside to make it soft for 1hour(If its black dates no need to soak).
▪Sevie maida and baking soda together for two times so that it combines well without any lumps
▪In a mixy jar add sugar and dates milk mixture and grind to fine paste
▪Now remove this to a bowl, add oil and give a nice stir until oil completey mixes with dates mixture.
▪Now add maida mixture mix well till it completely blends well
▪If its too thick you can little milk to get consistency of cake
▪Now at this stage you can add nuts and mix once, I have not used here.
▪Preheat oven at 170 deg at convection mode.
▪Meanwhile grease the pan with butter or oil dust flour and add prepared cake batter, tap once so that any air bubbles goes
▪Now bake the cake at 170 deg C for 35-40mins(Check after 30mins then proceed accordingly).
▪Check by inserting a knife or fork at the center of the cake, if it comes out clean then your cake is done.
▪Cool down the cake completely on a wire rack and then cut into slices. Enjoy the cake..

NOTE

*The colour of cake may varry due to dates colour….so don’t worry if your cake looks dark or light in colour
*baking time and degree may varry from oven to oven so please check cake after 20mins…
*I have used IFB microwave convection mode….
*The cake is slightly moist, very softwith a unique flavour of dates.
*Using of nuts is fully optional as my kids don’t like nuts in their cake I have not used any
*Brown dates are little harder so soaking them is a must, but black dates need no soaking is neded..
*those who don’t Take have microwave or OTG can cook this in a pressure cooker and fill about 1 1/2 inch with sand or rock salt ,place the cooker plate above the sand,remove the gasket and close the cooker and heat it in high flame for 10 minutes ,now keep prepared batter in the greased and floured cooker container and gently place it over the plate inside the cooker,close the lid and don’t place the whistle,keep the flame in high for 5 mins then simmer the flame to lowest possible and check after 40 mins..

CARROT CAKE

A perfect tea time snack made with carrots…
This is one of the easiest and quick cake to prepare if all the ingredients are ready….
Its so soft and fluffy that you can’t just eat one piece…
Best way to feed kids with carrots because kids wont say no to cakes ,its one of their favourite bakery item…
Cake made more healthy using carrots…
Don’t worry If you don’t have a oven or microwave…. you can prepare this in pressure cooker without its gasket and whistle, what you have to do is pour a thick layer of salt inside the cooker then place a cooker plate inside and heat this for 5mins, now keep the baking mould filled with batter inside this and cook for 25-30 minutes….your cake will be ready in the sameway as in the oven..

INGREDIENTS

•2 no eggs
•1cup sugar (or little less)
•1cup all purpose flour / Maida
•1tsp Baking powder
•1/4tsp cooking soda
•1tsp vanilla extract/essence
•A pinch salt
•3/4cup refined oil
•1cup grated carrot
•Spice powder(1 small piece cinnomon,2clove,a pinch nutmeg make powder or make powder along with sugar )

METHOD

▪ filter all dry ingredients like maida, baking powder, cooking soda, salt yogether twice or thrice, this is called dry mixture.
▪Add sugar to mixer along with cinnamon, cloves and nutmeg and make fine powder.
▪Now in a bowl add eggs beat well till forthy
▪Add sugar to this again beat this to creamy this is called wet mixture
▪now add in dry mixture to wet mixture little by little mix this well
▪Add vanilla extract, oil beat well
▪Now add carrots mix once again well ..
▪ preheat oven at 185 degree on convection mode for 5 minutes(mine is IFB)
▪now grease 8″long baking mould (any type of baking mould can be used)
▪Pour the cake batter(fill 3/4 so that the batter can raise well), tap once so that air bubbles comesout…
▪Bake this for 40-45 minutes (time may varry from oven to oven)
▪check with a knife inserted, if nothing sticks then cake is ready..
▪cool this well then demould and cut into pieces
▪Carrot cake is ready

NOTE
* Always check the cake in between 30 minutes…so that you get a idea for further baking has to be done or not
*baking timings may varry from oven to oven
*Here greasing the baking moulds means lightly spread butter/ghee/oil to the mould and sprinkle little maida all around the mould so that it becomes easy to demould.
*you can bake a cake in a cooker also, remove its gasket and whistle pour a thick layer of salt inside cooker instead of water place the cooker plate and close lid and heat this for 5min (preheat) on high flame…. now take a aluminium mould grease this as said above fill the cake batter 3/4 and tap this once and keep inside cooker close lid and continue cooking for 25-30 minutes….check once with a knife if nothing sticks to the knife then your carrot cake is ready or else continue cooking…

CHOCHOCHIP BROWNIES

This recipe I found in my cookery book while I was searching for brownie recipe for my sons birthday as he had demanded a brownie for his birthday, had no time to search other recipes and the   ingredients mentioned in this where available in my kitchen so gave a try to this chocochip Brownie…..Belive me its a awesome recipe….just melts in the mouth..my son was happy with this and wanted more..Try this and enjoy..

INGREDIENTS

1cup all purpose flour ( maida )
1 tsp baking powder
1/2 tsp baking soda
4tblsp coco powder
1/4tsp salt
2 eggs
1/2cup oil
3/4  cup sugar (I have used little less then 3/4cup)
1tblsp vanilla extract
2tblsp choco chips

METHOD

1) first preheat microwave at 170 degrees(mine is IFB)
2) seive all dry ingredients except chocochips 3times..
3) now in a big bowl add oil and sugar beat this well till sugar dissolves then add eggs beat well
4) now mix the dry ingredients into wet ingredients mix well no need to beat, just fold the mixture so that it get mixed well to a paste (do not over mix)
5) grease 8″ square cake mould  with butter and dust all purpose flour , tap it once
6) now pour the batter add choco chips on top…tap once
7) now bake this at 170 degrees for 25-30 min..cool this and enjoy

NOTE
*microwave temperature may vary from microwave to other
*once check the cake after 25min…
*its not a dry cake as we use chocochips

EGGLESS CHOCLATE CAKE

  Who doesn’t love cake isn’t it?…here is the recipe for all of you without using eggs…its fluffy, spoongy &has a awesome taste do try this nd let me know, leave a feedback friends..

INGREDIENTS

11/2 cups all purpose flour ( maida )
3 tblsp coco powder
1tsp baking soda
11/2tsp baking powder
1/2tsp salt
Seive all this together twice so that everything is mixed properly….keep this aside

1cup warm milk
1cup sugar
1tsp vanilla essence
2 tblsp lime juice
1/2cup oil
Butter for greasing

METHOD

Now in a big bowl first add milk, sugar mix both till sugar dissolves then add oil ,lime juice and vanilla extract mix well then add flour mixture little by little mix well , use a hand beater so that the mixture is mixed properly and becomes fluffy and smooth without lumps in the batter. Now grease a cake mould using butter then pour the mixture in it(only 3/4of the mould to be filled with the batter, so that it has enough space to raise up) tap its sides so that no bubbles are formed . Now bake this in oven at 220degree for 25 min.

*NOTE BAKING TIME MAY VARRY FROM OVEN TO OVEN SO KEEP CHECKING AFTER 20MIN
*THIS CAN BE EVEN DONE IN MICROWAVE CONVECTION MODE BUT USE SMALL MOULDS …I USE 220 DEGREE FOR 10 MINUTES IF NOT DONE AGAIN CONTINUE COOKING FOR 5MORE MINUTES…
