MUSKMELON JUICE

Muskmelon Juice /beverage  is my alltime favourite Drink among all fresh fruit drinks,❤…Its a refreshing and filling drink…

   Now you can find these wonderful muskmelon fruit every where abundantly for a reasonable price so enjoy making this fresh at home and relish ….

  You can even make milkshake out of it all you have to do is add 1/2 cup thick chilled milk instead of water …

You can even make a dessert out of it using coconut milk jaggery known as Harshale in konkani language(recipe already in my blog please check it)….

Recipe is very easy and quick

•few ice cubes

•1 muskmelon chopped into small chunks (wash and peel skin and remove seeds)

•1 1/2 tsp sugar if required(if fruit is not sweet add more)

•little chilled water(optional)

Blend altogether in a juicer or mixer, and your juce is absolutely ready to enjoy chilled!….

BANANA RASAYANA / SRIKARNE/HARSHAALE/DESSERT

   This is most popular dessert prepared mostly in Mangalore and Udupi during summer ….Now also you can find this lovely dessert in some of the hotels in villages in an around mangalore district….
   Konkani’s call this kele Harshale/Rasayan(kele means banana in konkani language ) usually this is prepared to keep body temperature cool…
  This is very easy to prepare with less ingredients, Some serve this along with neer dosa, idyappam  but I love this to drink or eat this chilled as it is..

INGRIDIENTS

•5 ripe Elakki bananas or any ripe banana
•1 cup fresh coconut
•1/4  to 1/2 cup grated jaggery (add according to your sweetness )
•1 tsp cardamom powder
•2 tblsp roughly chopped cashews

METHOD

▪ chop banana and refrigerate for a while
▪Grind coconut along with water to fine paste
▪Stain this using a stainer to get thick coconut milk,use only milk
▪add jaggery, stir well till jaggery dissolves
▪add chopped banana, cashews and elichi powder mix well till combined
▪Refrigerate this for sometime
▪Serve chilled…

Note

▪ I have used saffron strands for garnishing purpose otherwise it’s not necessary
▪Use this as a dessert,drink or along with neer dosa /sevai
▪ You can use any ripe banana but I prefer Elakki bananas
▪some use sugar instead of jaggery
▪ instead of bananas you can add chopped muskmelon it’s known as Chibada(muskmelon ) Harshale
▪you can add 2 tblsp thin beaten rice while serving ..
▪the coconut extract after removing milk can be used in making steamed rice balls (undi / kadbu )along with fresh coconut…so don’t throw it… Check recipe here

BONDA SHARBAT AND TENDER COCONUT MINTY DRINK

Bonda Sharbat or Tender coconut minty drink…..
     A refreshing drink with few stands of pudina,limejuice,sugar and of course main ingredient tender coconut water and its malai blend altogether with ice cubes…..really a must try refreshing  drink….

INGREDIENTS
(Making of tender coconut Sharbat)
2 cups Tender coconut water
1/2 Lime juice
6-8 mint leaves
Sugar to taste
Tender coconut malai
Few Ice cubes
      Blend altogether and serve chilled….

INGREDIENTS required for Tender coconut minty drink
      The small glass in the below picture represents Minty drink
   Here i have just added tender coconut water,few pudina leaves nd its malai refrigrated for an hour and served chilled…….both the drink tastes wonderful…

MASALA CHAS

    Masala chas/buttermilk is a cooling drink,which even acts as a digestive drink…..
    Masala chas is usually served after a meal for good digestion…
   Here buttermilk is served with a light flavour of greenchilles,ginger,corianderleaves,salt and hing

INGREDIENTS
•1cup thick curds
•1 greenchilly chopped
•Salt
•1tblsp corianderleaves
•1/2tsp ginger crushed
•A pinch asafoetida/hing
•Water as required to dilute

METHOD

▪grind all together except water and refrigrate 1hour
▪stain this using a stainer
▪adjust water according to desired thickness
▪serve chill or as it is

*staining is optional,if you stain ,buttermilk will be clear with a mild flavour of spices..

AAM KA PANNA

This is a refreshing drink which can be prepared and preserved for a long time when refrigrated….

INGREDIENTS

4 raw mangoes
2tblsp sugar
1-2tsp roasted jeera
/2 tsp salt

METHOD

Boil raw manges in little water  separate from its seed remove all the pulp out of it…then to this add all above mentioned ingredients blend to smooth paste..stain this and preserve in a container and use this pulp according to requirements…

SERVING TIP

While serving take required amount of pulp in a vessel add chilled water blacksalt a pinch, sugar  according to sweetness mix and serve…
Can replace blacksalt and add chat masala for that extra chatpata taste….

MANGO LASSI

  This is a perfect drink for summer, a thick mango lassi prepared using hung curd….can also call this as a mango smoothie.

INGREDIENTS

▪1cup mango pulp (ripe one)
▪1cup hung curd
▪1/2 cup milk
▪2-3tsp sugar
▪Few ice cubes

METHOD

  Blend all in a blender then serve in a glass …enjoy this thick lassi cold..

*hung curd can b prepared by tieing curds in a muslin cloth overnight hanged to a tap in such a way that all the water in curds are drippedout and the remaining thick extract inside muslin cloth is called hung curd..

MANGO JUICE

This is so simple that everyone knows  to prepare…A glass of fresh chilled mango juice I love to have during summer….this simple drink recipe goes like this

INGRIDIENTS

2 full ripe mango pulp
Little chilled water
Sugar according to ur sweetness

METHOD

Blend all together in a mixer and serve with ice cubes…enjoy your mango juice

*if you want to prepare mango milk shake then add milk instead of water and a scoop of mango icecream/vanilla icecream for a thick mango shake..
