GENDA DA ADDE /SWEET STEAMED CUCUMBER CAKE

Genda da adde / Nesel Adde / sweet cucumber cake.
Genda da Adde is a very famous Tulunadu recipe from Mangalore.
Genda in Tulu means coal, I have heard this dish is traditionally cooked on wood fire on low heat with coal on top which gives the dish an unique taste and flavour…..
But today no coal no wood fire we have found a alternative way to cook it and enjoy…. 😀
My friend had first introduced me to this sweet adde, in a famous restaurant at Udupi, then I started a like towards this dish and searched for recipes, googled more about it 😀 and after 2/3tries (not flop though), now I can cook this perfectly😋


(*Today I made this adde with leftover neer dosa batter and got it very perfect and tasty)

Homemade is Happiness❤️

INGREDIENTS

•2 cup rice (dosa rice or Jeera samba rice)
•1 medium cucumber (skinned and chopped or grated)
•1/4 tsp methi (fenugreek seeds)
•1 cup coconut
•1/2 jaggery or more (adjust to sweetness)
•salt to taste
•1 medium onion sliced
•1/2 cup ghee /coconut oil
•2 tbsp cahewnuts pieces
•2 tbsp raisins

•1 tblsp chopped coconut pieces (this is opt but I love them)


Method

◆Soak rice and methi in water for 2 hours.

◆Grind rice, methi , jaggery, coconut and cucumber to a slightly coarse batter adding little water (dosa batter consistency).

◆ Check sweetness, add more jaggery if you like it sweet.

◆add salt, give a good mix

◆Place a pressure cooker on medium heat , when hot add ghee / oil

◆when ghee is hot add chopped/ finely sliced onion and fry till they turn golden brown.

◆Add cashew nuts, coconut pieces and raisins and fry for few seconds.

◆Now mix the batter with 1/2 cup water and make a thin batter add this to the cooker and turn the flame to low heat.

◆ Do not use the pressure weight instead place a steel tumbler.

◆Cook the Adde on very low flame for an hour or check in-between by piercing a knife if it’s done. If any batter sticks to the knife ,cover a cook again for few more minutes.

◆once the Adde is done, let it cool down for few minutes, loosen the sides and and remove it from the cooker, cut to desired shape and serve.

NOTES

•Today I made this adde with leftover neer dosa batter, I discarded the top water from batter and then added cucumber and jaggery paste with little water to it to get correct consistency.

•I used coconut oil here

•Serve this drizzliing ghee or as it is

• this recipe can also be baked, by adding fried ingredients to the batter
