ONION PAKODA 

Here is a resturant type  ONION PAKODA / PAKORA/FRITTERS recipe for all you dear friends 😍😍😍 …..
From the below recipe you get just perfect restaurant type crispy, delicious non oily onion pakoras…..Just enjoy making this within minutes for evening tea / coffee or club this along with lunch as a sidedish or enjoy it with your guests or friends….

Easy to make  when you like to munch on something when it’s raining or during kitty parties 😊….

INGREDIENTS 

• 2 large onions finely sliced  (seperate each layers by squeezing)

•2 finely chopped greenchillies 

•Few chopped curryleaves 

•1/ 2 cup besan / Gramflour

•1/2 cup rice flour 

•Salt to taste 

•1/4 tsp turmeric 

•1 tsp chilly powder 

•a pinch soda (optional ) 

•1/4 tsp ajwain / om seeds 

•1 tsp coriander seeds crushed roughly 

•oil for deep frying 

METHOD 

▪In a wide container add all dry powders and mix well ,now add onions , chillies and curry leaves mix well applying pressure while mixing, this helps onions to release moisture and helps binding all together 

▪If necessary sprinkle water  (but not necessary, but the dough must be tight ,if the mixture contains more moisture then your pakoda will turn soft and soggy )

▪Rest 5 minutes, and again mix applying pressure 

▪Heat oil in a wide kadai to boiling point, then reduce to medium heat and make pakoda by dropping small portion of dough into oil

▪fry all sides till crisp and golden ,remove this to a absorbing paper to remove excess oil…

▪serve hot with mint or coriander Chutney or with ketchup 😊
NOTE 

* Slice onions only at the time of making pakoda, as it leaves it’s own moisture if cut fresh

*if necessary just sprinkle water to bind it ,adding to much water pakodas become soggy 

*see below picture for perfect idea of dough consistency

 

GOBI KURKURE

An easy ,quick ,instant crispy  fritters recipe using cauliflower  is here…..These fritters can be made for kitty parties or can be enjoyed during teatime or when on sudden arrival of guests or you can even enjoy this as a side dish with your regular lunch menu…..so gohead and give this a try and enjoy.. ☺

INGREDIENTS 

•2- 3Cups gobi/cauliflower florets 

•1 small onion chopped

•few curry leaves

•1 tsp ginger chopped

•1 tsp finely chopped greenchilles

•2 tblsp gramflour

•1 tblsp cornflour

•1/4 tsp asafoetida/hing

•2 tsp chilly powder (as per taste)

•1/4 tsp turmeric 

•1/4 cumin/jeera powder

•1/4 tsp garam masala powder

•1 tsp coriander seeds

•1 1/2 tblsp roasted gram dal /daliya (putana)

•salt as per taste

•oil for deep frying

METHOD

▪First check florets,then add this to water with salt and rest 30 minutes,this helps to kill insect or impurities present in florets 

▪Drain water and keep this in a colander to drain excess water

▪Take a mixi jar add gram flour,cornflour,salt,chilli powder,turmeric, hing,jeera powder,garam masala  and roasted gramdal grind to fine powder

▪To this add coriander seeds and grind for one pulse (just crush coriander seeds)

▪Now in a wide bowl add chopped onion ,chilles,curry leaves,ginger gobi mix well to this add the powder mix and mix 

▪Now sprinkle water lightly and mix with slight pressure so that it get mixed well 

▪Heat oil , keep this in medium flame and add florets one by one and deep fry till crisp flipping all sides

▪Now Gobi kurkure is ready to relish….

INSTANT RAWA CHAKLI / CHAKULI / MURKKU /CHAKRI

​Instant Rawa chakli/chakuli /Murkku….A crispy savoury snack made instantly using semolina and rice flour.. This is a perfect teatime /kids tiffin snack too…

     Here is a no fail recipe , even a beginner can enjoy making this crispy snack… I had noted this recipe from a food group long back,don’t remember the name who had shared this awesome recipe ..anyways thankyou for the recipe..

Usually the traditional way of making chakli is by urddal powder(dry roast and powder) and rice flour(wash raw rice dry and make powder),make a dough with some spices and then press to chakli and deep fry but this is was a lengthy process and we usually endup buying it from stores…..so now more getting chakli’s from bakery or stores ,here i am with a easy ,quick and  instant way of making chakli with easily available ingredients …..The time required is just 20-30 min so enjoy..

    Kids will love this having…i am sure they will demand more and more..☺

INGREDIENTS 
• 1 cup semolina / rawa (bombay rawa)

• 2 cups rice flour

• 2 &1/2 cup water 

• a big dollop of butter 

• Salt to taste

• 2 tsp white sesame seeds(til)

• 2 tsp cumin seeds  (jeera)

•1 tsp chilli powder (optional or can little more)

•1/4 tsp Turmeric powder

•3/4 tsp asafoetida( hing)

•Oil for deep frying
METHOD
▪Boil water along with salt (preserve 1 / 2 cup of boiled water seperately )

▪add semolina to the boiling water and mix well till mixed without any lumps and forms a dough

▪switch of flame and leave the mixture to cool awhile or till room temperature 

▪Now to this add rice flour,cumin seeds,chilly powder,hing,turmeric, til and butter mix well 

▪ make a firm dough as seen in below picture not sticky nor hard, just perfect

▪If necessary add preserved water to make dough

▪Now make large oval shaped balls and fill in chakli maker and press to chakli shape in a plate

▪Heat oil properly in a wide kadai then fry these chakli adding 4 -5 at a time till crispy or till the oil bubbles stop..(fry both sides fliping each time for equal frying)

▪remove to a absorbing paper to remove excess oil and enjoy

▪Follow same procedure with remaining dough

▪store this in airtight container when it comes to room temperature 
NOTE 
* The dough must be firm not sticky nor hard,when u press the impression must appear on it..as seen below

* This recipe yeilds 32 chakli’s

*colour will be yellowish golden so don’t fry it till dark golden it will then get burnt smell

BREAD BESAN SESAME TOAST

Are you thinking something for tomorrow’s breakfast then I am here with a easy and quick recipe for you all…
Bread Besan Sesame Toast or You can say a vegetarian bread omelette …
      You can also top it with generous amount of cheese grated and enjoy!

INGREDIENTS

•1 cup besan / Gramflour
•6 bread slices or as needed
•2 chopped greenchillies
•1 medium tomato chopped
•1 medium onion chopped
•2 tblsp coriander leaves chopped
•1/2 tsp chilly powder
•a pinch turmeric powder
•1/4 tsp garammasala powder
•1/4 tsp asafoetida
•1/4 tsp cumin powder
•1/4 tsp dhania powder
•Salt to taste
• water as required
• oil/butter/ghee
•2 tblsp Sesame seeds  (white Til)

METHOD

▪In a wide container add besan with onions, tomato, chillies, coriander leaves ,all dry powders along with water to a thick batter…
▪Now dip each slices of bread in the besan mixture
▪Make sure that veggies stick to bread slices or just add on the bread slices with the help of a spoon.

▪Heat a griddle, add ghee and place the bread slices, sprinkle some sesame seeds on top and fry this both sides on medium heat till crisp …
▪Cut to desired shapes and serve
▪Enjoy as it is done,with time it becomes soggy…

NOTE
*can add grated carrots, capsicum, cheese …
*Besan can be replaced with eggs

VEG BURGER USING POTATOES PATTIES

     This is very easy and filling recipe with vegetables in it…….
   Here I have used a potato patty inside the burger bun with vegetables in it…
    Burgers are kids all time favourite,so if you know how to do this at home,you need not buy it from outside anymore
     I have shared recipe in a easy way  and with the available ingredients inside your kitchen…. prepare this at home and enjoy along with kids…

INGREDIENTS

•Burger bun as needed(here I have used normal bun which is easily found)
•Few tomato slices
•Few onion rings
•Few cucumber slices
•Green chutney
•Mayonnaise
•ketchup
•Cheese slices
•tooth pick(garnishing)
•cherries (garnishing )

For making patties

•5 boiled potatoes and mashed well(boil for 5 whistles )
•1 small finely chopped onions
•1 finely chopped green chillies
•2 tsp gingergarlic paste 
•1 tsp garammasala powder
•1 tsp chilly powder
•5-6 mint leaves chopped
•5-6 coriander leaves chopped
•Salt to taste
•1 tsp Limejuice
•2 tblsp breadcrumbs
•Oil to drizzle while frying
 ▪Heat kadai add oil add onions,fry till transluscent, add ginger garlic paste fry well
▪add greenchilles,turmeric, garammasala powder and chillypowder saute well ,add pudina and coriander leaves and switch off flame
▪now add mashed potatoes,limejuice, salt mix well and add bread crumbs mix till it combines well….
▪cool and make tikkis of thick round shape and fry on hot griddle drizzling oil, cook both sides till done as seen in below pic…..

METHOD (How to place burger)

▪ Mix mayonnaise and mint chutney and prepare a mint mayyo dip..
▪Cut burger bun into halves and spread mint mayyo dip both the sides
▪Now take one halves, the down part of burger (faces the mayyo dip to you ), place the slices of tomato, cucumber and onion rings , tomato ketchup, potato patties ,cheese slice ,tomato slice ,cucumber and onion rings close it with the top burger halves…
▪Now take a toothpick pierce a cherry and insert this in the middle of the bun
▪microwave this for 30 seconds , so that cheese melts or those who don’t have  microwave see that your potato patties are hot
▪enjoy immediately with ketchup ..

NOTE

* if mayonnaise is not available mix butter and green chutney and use this but the jucyness in burger will be missing
*cheese slice can be omitted if not available

RICE CHEESE CROQUETTES

    Many types of cheese croquettes are tried by all of us but have you tried doing this with cooked rice ..Yes this croquettes are made using cooked rice, potatoes and of coarse with generous amount of cheese….
    This recipe is very easy and quick best evening snack when kids are back from school…
   Here I am sharing the recipe for kids so I have  added spice according to their taste,but when elders want to taste can add extra spices like chat masala,chillies chilly powder according to their taste…
  Here I have deep fried the croquettes which is not so healthy ,you can give any shapes that you like as per your kids demand
This can be shallow fried on tawa or  make small balls and fry in appe/paniyarakkal pan which is healthier option….
   I have tried doing this in appe pan which is a guilt free option,and tastes equally good…
    Recipe is as follows…

INGREDIENTS

•2 boiled and mashed potatoes
•21/2 cup cooked rice(preferably overcooked rice)
•4 tsp All purpose flour/Maida
•1/2-3/4 cup milk
•2 tsp oil
•1 finely chopped greenchilles
•2 tsp coriander leaves
•3/4 cup grated cheese
•1/2 tsp pepper powder
•salt
•breadcrumbs for rolling
•oil for deep frying

METHOD

▪first mash well potatoes and seperately  without any lumps or pieces in it keep it ready..( overcooked rice is best,as it gets mashed well)
▪Now heat a kadai add oil ,let this heat add all purpose flour,fry this well till a good aroma and slit colour change
▪now add milk ,see that gas flame is low while adding milk otherwise lumps will get formed
▪mix this to a thick sauce consistency(if necessary add more milk)…(this is white sauce)
▪now add salt,pepper and greenchilles give a good mix
▪now add mashed potatoes,mix well ..
▪add cheese ,cooked rice & coriander leaves mix this well for 2- 3 minutes
▪switch off gas and make desired shape
▪roll this in bread crumbs and deep fry till golden frying equally all sides
▪remove this on a absorbent paper to absorb excess oil…
▪serve hot with mayonnaise and tomato sauce..

NOTE
*you can mash potatoes or grate it
*overcooked rice is best suited for the recipe
*while deep frying, once you add croquettes don’t keep on rotating it as there chances of cheese comingout…
*you can add boiled corn,chat masala,more of spices according to individual taste..

IDLI MANCHURIAN

Have you ever tried this not yet then must give this a try….This tastes and looks like paneer manchuri…. no one can say that its made from idlis….
      You can make this for evening snacks, when kids return from school or you can prepare this when guests are around or during parties…..a filling delicious recipe will be ready in a jiff……
      Prepare idlis in the moring for breakfast and make manchuris in the evening, I am sure that kids will demand idlis very often..
         Now a days kids are so fussy about eating that it becomes difficult for us…so we end up thinking what to prepare for breakfast but now you can tell your kids to have idlis in morning and their favorite manchuri will be ready in the evening when they are back from school….
    Bache bhi kush Maa bhi kush…

INGREDIENTS

FOR FRYING IDLIS
•Leftover Idlis chopped into cubes
•2 tblsp maida /all purpose flour
•2 tblsp cornflour
•2 pinch Salt
•1/2-1 tsp chilly powder……..mix this all except idli with water to slightly thin batter, dip idli in this and deep fry till golden and crisp,remove this on a absorbent paper to absorb excess oil

FOR MAKING MANCHURI
Ingredients required
•1 tblsp oil
•1 pod garlic chopped
•1 cup onion chopped
•1-2 chopped greenchilles
•1 medium capsicum cubes
•1 tsp gingergarlic paste
•1/4 tsp chilly powder
Salt a pinch or according to taste
•2 tsp soyasauce
•1 tsp vinegar
•1 tsp chilly sauce
•2 tblsp tomato ketchup
• 2 tblsp coriander leaves chopped
•spring onions chopped optional…

METHOD

▪ Heat a wide thick bottom kadai on high flame, add oil,  garlic chopped fry till golden
▪Add onions,fry till translucent(let it be crunchy)
▪Add gingergarlic paste, capsicum, greenchilles, salt a pinch(as required)saute well
▪Add chilly powder, soya sauce ,vinegar,chilly sauce, tomato ketchup saute all on high flame
▪Now reduce the flame to medium and add fried idlis and coriander leaves mix this well till all the sauces are combined with idlis…

NOTE
*I have used mini idlis refrigerated for an hour
*cook on high flame
*I didn’t add spring onions here
*the same recipe can be followed for sya chunks but first boil soya for 5 min and squeeze excess water from it then follow same method..
