Brinjal Fries /Eggplant or Aubergine Fries…
Here I have used udupi brinjals which is popularly known as Mattigulla….they are green in colour and round in shape…you can use with brinjals available to you…
•3 tblsp Chiroti rawa /very fine rawa as needed
•1 / 4 tsp asafoetida /hing
•1 tsp everest chilly powder
•1 tsp rice flour
•Salt to taste
•Oil as needed
▪ Cut brinjals into half then into thick slices (not too thick nor thin)
▪put this in salt water for sometime
▪Mix rawa,salt ,rice flour, hing and chillypowder well
▪ Heat iron dosa tawa,spread oil and heat this
▪Now drain water from brinjals and roll this one by one in rawa mixture and put this on hot tawa
▪keep medium heat,close lid cook for a minute
▪ sprinkle water and continue cooking
▪flip and cook other side by drizzling oil till crisp…
▪Enjoy hot as sides for rice or with evening tea or coffee..
*add salt to the mixture keeping in mind that already brinjals are kept in salt water..
* Even potatoes, raw banana,banana shoots, breadfruit can be used to make fries with the same recipe
*Other way of preparing this is deep frying using Gram flour batter or bonda batter….
