CHINESE POTATO AND WHITE NAVY BEANS CURRY

Chinese Potato and white Navy Beans curry……a Authentic konkani curry called as kook ani tingalavre Bendi…. The same recipe can be followed for other vegetables like potatoes and any type of bean,malabar spinach(valior basale)/spinch(palak),manglore cucumber ….so follow the recipe below and enjoy..

Ingredients

•1/2 cup  navy beans soaked overnight
•1-1/2 cup chinese potato peeled nd cut into half
•6-8 fried red chillies
•1 cup grated coconut
•A small gooseberry size tamarid
•Salt as per taste
For Seasoning
•1 tblsp Oil
•10-15 flaked crushed garlic

METHOD

▪Pressure cook chinese potato and navy beans gor 3-4 whistles …
▪Grind coconut,redchillies and tamrind to fine paste
▪Now mix both  boiled vegetables and masaka together let the gravy be thick not runny (use the boiled water itself for making curry)…
▪After a good boil add salt and give garlic seasoning close lid immediately for the flavours to get combined…
▪Enjoy with rice
