VEGETABLE RICE BAATH/VEGETABLE PULAV

    Some call this as vegetable baath some call this vegetable pulav……this is a complete onepot meal with full of nutrients as lots of vegetables goes in it…
     This recipe goes well for your lunch box or even in the parties or during lunchtime…..

INGREDIENTS

•2 cups sonamasoori /basmati rice
•2 cups mixed vegetables chopped(beans,carrot,peas cauliflower,potato,knol kol…)
•1 medium onion sliced
•1 medium tomato chopped
•11/2 tblsp oil
•1 bay leaf/tejpatta
•1 star anise
•1 tsp aniseeds
•4 cups water
•salt as per taste

For making masala paste
(Grind using water)

•1″ginger
•10 flakes garlic
•2 tblsp coconut gratings
•4-5 greenchilles(as per taste)
•1/4 cup coriander leaves
•1 tblsp pudina(optional)
•4 cloves /lavang
•1 -2 piece cinnomon
•3 cardamom pods
•1/4 tsp turmeric powder

METHOD
▪keep water for boiling in a vessel
▪ Heat a cooker add oil add aniseeds, tejpatta,star anise fry awhile
▪add onions fry this till raw smell disappears
▪add all vegetables, mix this for a minute
▪ add ground masala ,give a good mix
▪ Now add in tomatoes fry well
▪add rice,fry for 2-3 min
▪add boiled water
▪add salt
▪close cooker lid and cook for 2 whistles
▪serve hot with any raitha..
