EGG CURRY

This is such a simple ,easy and quick egg curry where coconut is not used in the preparation…
       This curry goes well with rice,roti,chapati, bread…
       Here I have used whole raw egg which is broken into curry and then boiled in curry itself by this way egg absorbs all flavours and masala in it and tastes delicious ….

INGREDIENTS

•4 eggs
•2 onions chopped
•2 tomatoes chopped
•1 tsp gingergarlic paste
•11/2 tsp chillypowder(or more)
•1/4 tsp turmeric powder
•1 tblsp dhania /coriander powder
•1/4 tsp jeera /cumin powder
•1 tsp garammasala powder
•5 cashews
•2tsp oil
•Salt to taste
•2 tsp coriander leaves chopped

METHOD

▪heat kadai add oil,onion,tomatoes, gingergarlic paste fry this for 2 minutes
▪Add all dry powders,cashews except salt fry till all masala gets blended well with onion mixture and becomes a mass
▪Now keep this aside to cool,once it it cooled blend this in mixer to a fine paste without water
▪Now in the same fried pan add this paste with little water and switch on the gas
▪Let this boil well add salt,mix well
▪Now break eggs in it(don’t mix)
▪Cover and cook for 5 -6min or till eggs are cooked
▪Garnish with coriander leaves
▪Serve

NOTE
* when you breaks eggs into curry its better to first break in a bowl and then add this to curry because sometimes eggs are spoilt so its better to check and add one by one…
*if you don’t like breaking eggs you can use boiled eggs also..
