Uttappam is southindian breakfast recipe, its a thick dosa/pancake with some vegetables in it…
This is usually served with chutney or sambar….A filling breakfast recipe is as follows..
INGREDIENTS
•1/2 cup urd dal
•1 cup raw rice
•2 greenchilles finely chopped
•2 medium onions chopped
•1/2″ ginger grated/finelychopped
•2tblsp coriander leaves chopped
•Oil to drizzle while making dosas
•Salt according to taste
METHOD
▪wash and soak urd dal for 2-3 hours
▪In the same way wash and soak raw rice for 2-3 hours
▪Grind urd dal to fine fluffy paste by adding water at times,remove this to a container
▪Now grind raw rice grind to little coarse paste(not fine paste nor too coarse)
▪now remove this to urd dal batter container mix both well,close lid and leave to ferment atleast 6-8 hours
▪When the batter is ready add salt to it and mix well
▪Prepare a mixture of onions, corianderleaves,greenchilles in a bowl and keep ready
▪Now heat dosa griddle well,when hot sprinkle water and lower the flame and spread a laddle full of batter,by just moving the laddle once,let the dosa be thick (not too thick,medium thick),
▪Now sprinkle already prepared onion mixture as much as desired on full dosa as seen in pic..
▪Drizzle oil at sides and on top
▪Close lid and cook on medium flame till the dosa is cooked at bottom
▪Now turn dosa and cook till light golden brown or till done
▪Serve with chutney or sambar
NOTE
* you can make uttappams with the remaining idli batter also,taste don’t change
* can also add capsicum chopped,carrot grated,curryleavesto the onion mixture…
*this dosa is cooked both sides
*raw rice can be any type of white rice like soona masoori,dosarice..
