A refreshing and healthy salad made using fresh cucumber and soaked moongdal…..
This is famous among brahmins where they give this along with prasadam on festive days,they call this kosambari…..
This is one of favourite recipe for which I can skip my meals,for diet conscious people this is one of the best recipe….
•1 medium cucumber peeled and finely chopped
•1/2 cup moongdal washed and soaked for half an hour
•1 tblsp freshly grated coconut(optional)
•2tsp finely chopped coriander leaves
•1 finely chopped greenchilles
•1 spring curryleaves
•1 dry broken red chilly
•1/2 tsp mustard
•A pinch hing/Asafoetida
•Salt to taste
•1 tsp limejuice or little more according to tangyness…
▪ drain water completely from soaked moongdal
▪Now mix moongdal, cucumber,coconut and coriander leaves
▪Now prepare a tempering/seasoning of oil ,mustard seeds,red chilly, greenchilles, hing and curryleaves
▪Add this seasoning to above cucumber mixture add salt, limejuice mix well and serve immediately…
*you can also grate cucumber and use but squeeze its water before adding to mixture…
*Always mix salt just before serving otherwise it will leave water..
