   Masala dosa is a southindian breakfast,in which a crisp thin dosa is prepared,a spicy red chutney paste or powder is spread above dosa,a potato filling is kept and is served with coconut chutney and samber…
   Usually in restaurants or hotels this type of dosa is prepared on a big tawa,so that it can be spread as big and thin possible….but we can prepare this on our regular tawa ,there is no difference in taste…
   So here is the hotel style Masala dosa recipe for you all to enjoy…


•2 cups sonamasoori rice/dosa rice
•1/2cup urad dal
•1/2cup Tuvardal/ pigeon peas /arhar dal/yellow lentils
•1tsp methi/fenugreek seeds
•Fist ful of Channa dal/bengalgram dal
•2 tblsp roastedgram/putani/hurikadle/kadlepappu
•oil or ghee to drizzle
•salt to taste
•1 tsp sugar

▪Wash and soak all the ingridients except roasted gram,salt and sugar together for 3-4 hours in water
▪While grinding add roastedgram/ hurikadle and grind all to a smooth paste
▪Keep the batter overnight in a warm place or ferment 8 hours
▪Next day add salt to taste and 1tsp sugar(this gives colour to dosa)and rest aside for 15mintes
▪Heat a non stick Dosa tawa or regular dosa tawa
and pour a laddle full of batter and rappidly  spread the dosa as thin as possible,
▪pour ghee/ oil on the sides  of dosa sprinkle some red chutney powder and cook till crisp
▪When done,place potato filling and fold the dosa and serve with chutney and sambar
▪this dosa is cooked one side

•1cup grated coconut 
•2Green chillies
•2tblsp Coriander  leaves
•Salt to taste
→Grind all the above ingredients once and then add water and grind to a smooth paste…

•250 gms potato washed(Presure cook for 5-6 whistles then Peel the skin and roughly mashed)
•3 medium onions finely sliced
•2tsp Oil
•1/2 tsp Jeera
•1/2 tsp mustard seeds
•1 tsp Urad dal
•1 tblsp Channa dal
•2-3 Green chillies slit
•1/2 tsp Turmeric powder
•1/2 cup water
•2tblsp corianderleaves(optional)
•1spring curryleaves


▪Heat oil in a kadai add mustard seeds, when it pops add jeera,urad dal,channa dal,curry leaves,then green chillies add turmeric powder, saute well
▪Now add onions saute till it turns to pink add salt mix well  add little water then add mashed potatoes,coriander leaves mix well,if the filling is too dry add some water to keep it mosit
▪Add lime juice at the end,give a quick mix and your filling is ready
▪Remember filling must not be watery it must be only moist and in a mass form..

2 tblsp chilly powder
5 flakes garlic
A small piece tamarind
2tblsp Roasted gram

→grind all to a smoorh powder…
→or you can also make thick paste out of it using water
→I prepare powder form as its easy to sprikleand can be stored for later use…
