    Here is a easy quick vegetable biryani with simple curd raitha….
  I love anything which is prepared with rice which is quick to prepare and onepot mealwith all nutrients and involves less work…



• 2 medium onions sliced
•Mixed vegetables as per your choice(carrots, peas, potato, cauliflower, beans, cauliflower..)
•1/2tsp red chilli powder
•Salt as per taste
•1cup basmati rice/sonamasoori
•3 tsp ghee
•1 tblsp oil
•1tsp limejuice
•1/2tsp shahjeera
•2 bay leaf/tejpatta

For grinding

•1/2 cup Mint leaves
•3tblsp coriander leaves with steam (gives good aroma)
•2 green chillies
•5 garlic cloves
•3/4 tsp Fennel seeds
•2 Cardamom
•4 cloves
•1″ cinnamon
•1 Star anise
•10-12cashews(I hve used pieces)
•1tsp kus kus


▪Soak the rice for at least 1/2 an hour.
▪first make fine dry powder using cinnamon, cloves, cardamom, kus kus, fennel seeds, star anise, cashews


▪ to this add pudina, coriander, greenchilles, ginger, garlic with little water and grind to a smooth paste


▪ paste should be fine like this


▪Chop the vegetables to your desired size 
▪Heat a cooker with oil and 2tsp ghee
▪Add shah jeera, bayleaf and onions fry onions till transparent.
▪Add the ground masala fry for a second.
▪Add chilly powder and fry in medium flame for 2 minutes.
▪Add the veggies except cauliflower.
▪Fry for 2 minutes and add the drained,soaked rice.
▪Give it a stir for 2-3 min (don’t fry with pressure chances of breaking rice).
▪Add 1 and 1/2 cups water,bring to boil
▪Add the cauliflower, salt limejuice, remaining ghee and mix well and close the lid and pressure cook with 2  whistles in medium flame
▪serve hot with simple curd raitha raitawith onions and tomatoes chopped…


*vegetables can used according to your choice and availability
*I have used 1 medium carrot, 6-8 beans, 1medium potato, fistful of frozen peas,10 florets of cauliflower
*as we use cashews and kuskus in recipe ,the taste of biryani is rich and due to this there is no need of using curds or tomatoes….
*can add coconut milk if desired for extra taste and richness or grind 1/2cup coconut along with other ingredients….
*you can cook the same recipe in a thick pan without whistles for 8-10 min on medium flame with lid closed and one needs to stir occasionally so that it doesn’t get burn
*soaking of basmathi rice makes the rice cook fast
*when using sonamasoori no need of soaking ,wash the rice and use..
